Humbly asking for assistance

I mostly do air conditioning, alot of water and air cooled equipment. I understand how the medium temp refrigerators work but the freezers really get me. I got hooked into taking care of girlfriends dads shops. I fixed the ACs did all the PMs and got sucked into everything else. Sorry for the rant.

I was working on a national refrigeration ulg50bcp-5, Low temperature freezer. Both fan motors had failed (shaded pole). I had previously had to repair a leak and replace the oil sight glass. I triple evacuated, and charged with the best intentions. The highest I could get me suction up to was 5, ive been told the norm is 18-20. Ive looked online and everyone seems to have different numbers. The freezer is at 0 degrees always. I know I didn’t go crazy with the gas, I went with pressure and amperage. I figured since this was only a box that would be accurate enough. A couple of weeks go by and the thing goes down, fast forward to today I replaced the motors and when I tried to check rotation.. nothing. I called my buddy he told me that the only two things that would lock out the evap fan is the pressure switches. I cut both and jumped them out.. nothing. I tried to trace the wires the best I could but I ended up blowing a fuse in the process. I can trace and test the compressor its all right there. The evap wires are like computer wires the plastic plug and play ones. I finished a half hour ago and had to walk, I dont know what else is locking my evap fan out, I have no voltage on my wires whatsoever. I have no diagram, and when I type the model into the google, it comes up as a carrier freezer. I would truly appreciate any help, ideas, or if anyone is familiar with this specific piece of equipment.
