Refrigeration side work (light commercial)

My question-how lucrative is it when done above board?

I currently work for a light commercial refrigeration equipment manufacturer (prep tables, undercounters, upright reach ins, etc) doing warranty calls and really dig the work. My supervisor who's been training me does side work and has been for quite a while. I'd love some extra income and the work has been easy enough for me. I've my EPA and was thinking to get a contractor's license eventually, but have since read in California you only need it for work above $500. 90% of the work I come in contact with now is below this number. There's tons of work out there but not sure if it's an uber-like deal where the hidden costs eat away 90% of profit.

My supervisor does his work below the radar, I'd rather do it above board though with business license, taxes paid, full paperwork, insurance, etc. Anybody have experience in this?
