Hello, all. My wife and I are in the planning stages of getting approval for a commercial kitchen in our basement - lots of hurdles.
We're thinking of getting two ~6x6 walk-ins, a freezer and a fridge, hopefully at auction. I realized, though, that I have very little idea of what I'm looking at :)
Many of these are 7'6" tall. How much clearance do I need to reassemble it? My ceilings aren't much higher than that.
Can the boxes be remote cooled? If the city approved it, it would be fantastic to have the waste heat outside, rather than in the kitchen space. Is that something that the existing cooling system could be adapted to, or would I need to find a specific system designed to work that way? I'm positive I can't have one with the cooling unit on top, there's not enough clearance.
What else should I look for or avoid?
